autotools: recognize more Linux targets when setting `-D_GNU_SOURCE`

To set `-D_GNU_SOURCE`.

Required to declare `accept4` on uclibc targets. `host_os` can have
the value `uclinux-uclibcgnueabi` in this case.

Fixing:
