docs: manpages: Clarify that only TLS/TCP remote access needs 'virtproxyd'

Spell out that TCP and TLS needs virtproxyd as 'off-host' might mean
that also ssh transport requires it.

Also fix the name of the 'virtproxyd' daemon.
