uboot-zynq: bump to 2026.04

While at it, replace the SPI MAC address read patch with a rebased
series from the Digilent u-boot repository. It should be noted that
this feature is still not upstreamed. Refresh patches as required.

As most of the zynq boards are merged into xilinx_zynq_virt, add
UBOOT_CONFIG to the respective boards in the Makefile.

Compile-tested: all Zynq boards
Runtime-tested: Antminer S9
